A sheep 'cool wall' vividly illustrating the intricacies of carcase classification will get its first public showing at North Sheep next month.
The 12 lifesize images of the EUROP sheep classification carcases form part of the EBLEX stand, helping producers to better classify their sheep according to the specifications of the major markets.
A live handling demonstration alongside the 'cool wall' - so called because it replicates a typical line of carcases hanging in an abattoir chiller room - will help producers put the classification of carcases into context on live animals, and give them the chance to improve their skills in selecting lambs to meet market specifications.
EBLEX butcher Viv Harvey will be demonstrating the importance of consistent selection of lambs and highlighting the variation in fat trim levels between a fat lamb and an ideal lamb for the main markets. He will also run through a display of lamb loins showing the importance of consistency in selecting lambs at similar weights, conformation and fatness levels.
Chris Lloyd, Industry Development Manager for EBLEX, said: "In times of high prices such as we are currently experiencing, the need to select lambs which meet market specifications is still incredibly important.
"The cool wall is a new tool in helping us communicate the lamb selection message to producers. Alongside the live handling and butchery demonstrations, and other activities we have planned, we are geared towards helping producers ensure they get the best possible returns from their flocks."
Also at North Sheep, EBLEX will be hosting a seminar on exports, welcoming a trade mission from Romania and journalists from Belgium and Germany, and there will be a vet on hand to talk about common issues, like lameness and fertility among the sheep, explaining how to complete your own ram "MOT".
EBLEX is a mainline sponsor of North Sheep 2009, which takes place on June 3 at Laund Farm, Chipping, in Lancashire. At the event, they can be found at Stand 53, in Shed 7.
